Today we have 3 easy vegan Thanksgiving recipes that are super quick to make and great if you’re in a rush the day of. We’ve got a healthy cornbread recipe, the best dang green beans ever AND an herb crusted tofu recipe that is the perfect vegan main dish for your Thanksgiving table!
☆ PUMPKIN CORNBREAD:
1 bag GF cornbread
1 flax egg
1/2 cup pumpkin puree
1/4 cup olive oil (or oil of choice)
Follow package instructions and enjoy!
☆ TAMARI GREEN BEANS:
1 tbsp oil
2 – 3 garlic cloves, sliced
1 lb green beans
1 – 2 tablespoons gf tamari
1/2 cup pumpkin seeds
Pepper to taste
Fresh sage to garnish
Cook the garlic and beans with the olive oil over medium heat for 5 minutes. Add the tamari and pumpkin seeds, season with salt and pepper and cook another 10 – 20 minutes. Serve with fresh sage.
☆ HERB CRUSTED TOFU:
1 block extra firm tofu
1 package herb coating mixture
1 box vegan mushroom gravy
Fresh sage to garnish
Slice the tofu into 6 “steaks”. Coat in the herb mixture and bake at 400ºF for 30 – 40 minutes, flipping halfway through until the tofu is crispy. Serve warm mushroom gravy and a garnish of fresh sage.
