Whenever I get the chance to enjoy a grown-up dinner without the kids (ha!) I whip up this dish. It only requires one pan (who wants to waste valuable adult time doing dishes?) and uses one of my all-time favorite ingredients — capers. These briny little balls of flavor are a seriously high-impact ingredient, and they’re always in my pantry. After you see what they can add to this dish, you’ll want to keep a jar in yours too!

1/2 cup cherry tomatoes (the smaller the better)
1 tilapia filet (8 ounces), or any other flat fillet of fish (8 ounces, not more than ¾ inch thick at the thickest part)
2 small bunches arugula (about 3 cups)
1 tablespoon capers
Pinch red-pepper flakes, if you like it spicy
1 tablespoon butter
1/2 lemon (or 1 tablespoon fresh lemon juice)
