SHRIMP CEVICHE with CITRUS | easy, light and healthy

This shrimp ceviche is Mexican-inspired with a California citrus flair. It’s amped up with oranges and grapefruit, along with cucumber, red onion, jalapeño and cilantro for a bright, light and delicious shrimp ceviche recipe.

Shrimp ceviche is perfect for spring, summer and Cinco de Mayo (which is right around the corner) as it’s a light, easy and healthy recipe. Make sure to read the full blog post (linked below) on why I parboil my shrimp when I make this recipe, but I don’t when making fish ceviche. Enjoy!
