Spaghetti Squash Egg Cups
12 Servings
0 Smart Points per serving

1 – 1 1/2 cups spaghetti squash, cooked
13 eggs
1/4 – 1/2 cup Kraft fat free shredded cheddar
Seasonings as desired (Everything But the Bagel, Italian Seasoning, sage and rosemary, salt and pepper, etc.)

Mix spaghetti squash, one egg, cheese and desired seasonings.
Press mixture into lightly sprayed muffin tins, create a cavity in the center of each. Bake at 425 for 20 minutes.

Crack an egg into each spaghetti squash cup. Sprinkle with salt, pepper or seasonings of choice. (Can also too with additional cheese; adjust smart points as necessary.) bake at 375 for 8 minutes or until egg is as done as you prefer.

Chicken Vegetable Sauté with Poached Egg
1 Serving
0 Smart Points

Halved brussel sprouts
Diced zucchini or yellow squash
Cooked chicken breast, diced
1-2 eggs
1 oz. Trader Joe’s fat free feta
Seasonings of choice (Everything But the Bagel, Italian Seasoning, sage and rosemary, salt and pepper, etc.)

Spray large pan with cooking spray. Saute brussel sprouts until partially cooked. Add zucchini or yellow squash, sauté until squash is almost cooked. Add pre-cooked chicken breast and heat through. Transfer to serving plate.

Fill a coffee cup half full with lukewarm water. Carefully crack egg into the cup. Cover with a small plate or plastic lid. Microwave for 50 seconds. If egg is not poached, microwave for another 10 seconds. Continue checking at 10 second intervals until egg is cooked to your preference.

Add poached egg(s) to sauté mixture. Sprinkle with feta cheese and additional seasonings if desired.
