This is a cod fillet with a mint/basil salsa topping with roasted cauliflower as a side. I bring you along for the prep and the cooking of this entire meal. ZERO SMART POINTS!

Ingredients Needed:
Head of Cauliflower
2 Cod or Flounder Fillets (frozen or thawed)
2 Roma Tomato
1/4 cup Basil (cut into ribbons)
1/4 cup Mint (cut into ribbons)
1 lime
Directions:
Cut up cauliflower into bite sized pieces and put onto oiled pan and put into a 450 degree oven for 25 min. While this is cooking prep other ingredients
Cube up tomatoes, basil and mint add all to a med sized bowl and the juice of 1/2 lime and a dash of salt and pepper (set aside)
Prep cod with salt, pepper and fox point (or your fav seasoning)
Preheat sauce pan on med high heat.
Once pan is hot sear fish on both sides for about 2 min per side. Place both on a foil lined cookie sheet.
Once cauliflower is done add fish to a 375 degree oven for 15 to 20 min (depending on how thick fish is and if it’s frozen) Less time for thin or thawed fish.
While fish is cooking add pan back to heat and add your tomato mix to the hot pan.
Cook, stirring often for about 2 min or until basil and mint wilt. Place 1/2 of the mix over one piece of cod and add 1/2 the cauliflower to your plate. Top fish with lime juice and enjoy!
