Weight Watchers ~Recipe of the Week~Cauliflower Chicken Fried Rice

Recipe:
2 Teaspoon of Vegetable Oil
1/4 cup of chopped brown onion (a little more if you like onions)
1 teaspoon minced garlic (I used 1 frozen cube from TJ)
1 1/2 – 2 cups frozen vegetable mix
2 large eggs lightly beaten
2 Tablespoons of Soy sauce or Liquid Aminos
1 large Chicken breast cooked and chopped or any other protein
1 Bag of Brown Rice (If you choose to add it)
