Weight Watchers recipe – Kielbasa with Onions, Peppers & Zucchini – 4 Points Plus!

My recipe for Kielbasa with onions, peppers & zucchini.

1 pkg Hillshire Farms Chicken Hardwood Smoked Sausage
1 Large onion
2 medium zucchini or squash
2 medium red peppers
coarse kosher salt
cooking spray
2 nonstick pans (makes the recipe quicker. It’s okay to use only one pan!)

Vegetables are NO points. Kielbasa is 3 points for two ounces of meat. 2 tblsp of low fat sour cream (optional) is 1 point. I add one point in this recipe for oil sprayer I used to coat pan. You can use regular cooking spray instead and save yourself a point.

If you have a hard time finding the chicken kielbasa, you can use turkey. It just doesn’t caramelize like the chicken does.
