This is a yummy, super fast and Weight Watchers recipe for Buffalo Chicken Strips. And…it’s an Instant Pot recipe! You’re going to love it. Dip these spicy strips in Bolthouse Blue Cheese and you’re ready to serve up a fantastic appetizer.
Approximately 2 lbs chicken breast, cut in either strips or nuggets.
1/2 cup Franks Red Sauce (not buffalo, just straight Franks)
2-3 shakes of Tabasco sauce (optional)
Few sprays of I Can’t Believe It’s Not Butter
2 teaspoons corn starch
Season the chicken with salt, pepper, garlic powder, onion powder, etc., to your liking.
Add approximately 3 tablespoons of liquid to the corn starch, stirring to make a slurry. Set aside.
Heat Instant Pot on saute function until hot. Spray with butter-flavored non-stick or olive oil spray.
Add chicken and cook until browned. Pour in Franks, Tabasco sauce (if using). Give the chicken a few sprays of the I Can’t Believe. Stir well.
Put lid on IP, set to Manual and give it 5 minutes. Quick release when time is up.
Remove lid. Stir chicken. Add the cornstarch slurry. Stir well. Turn IP to Saute function. Let chicken mixture boil for a few minutes in order thicken the sauce to your preference, stirring so not to burn or stick. I boiled mine for approximately 3-4 minutes. Turn off IP. Let sit for 10 minutes.
Serve with Bolthouse Blue, carrot sticks, celery, etc. YOU ARE GOING TO LIKE THIS!! Enjoy.
