A Delicious and Easy Mini Egg Quiche, ala Weight Watcher’s Freestyle Smart Point program!
Serving: 1 freestyle smart point for each Quiche
Preheat oven 350 degrees
Makes 6 quiches
1 ¼ cups “egg beaters” type eggs. You can use all “egg beaters” and nix the whole eggs if you like.
1 whole egg
½ cup diced onion
½ cup sliced mushroom
1/3 cup diced bell pepper
2 Sargento Ultra-Thin Cheddar Cheese Slices, cut into 6 squares
1 ½ Jimmy Dean Turkey Breakfast Sausages, chopped
Spray saute pan with oil of your choice (I used canola)
Saute veggies until soft. S&P to taste. Let cool slightly.
Beat whole egg and add to “egg beaters” – mix together.
Spray 6 cups of a muffin tin with oil.
Add approximately ¼ cup vegetable mix to each muffin cup. Top each quiche evenly with chopped turkey sausage. Pour egg mixture on top to fill cups.
Bake at 350 degrees for 20 minutes. Remove from oven and add 2 cheese slices to each quiche.
Return to oven and bake for approximately 10 minutes longer. Test doneness with sharp knife. It should come out clean.
Remove from oven. Let cool approximately 5 minutes – this will aid in removing quiches from muffin tin.
Serve with English Muffin (3 points for a whole Trader Joe’s Fat Free English Muffin)
