Chicken & veggie curry Simply filling weight watchers recipe Momentum Freestyle

This is from an old cookbook – when it was known as momentum. Whatever name it is given, it also works with simply filling. I served over brown rice.

2 tsp olive oil
2 lrg onions
1 tsp garam masala or curry powder
1 lb skinless boneless chicken breast, cut into 1” pieces
3 small sweet potatoes – halved lengthwise and then cut into 1/2” slices
1 1/2 cup red sodium chicken broth
1/2 tsp salt
1/4 tsp cayenne pepper
1 cup brown rice
1 (16oz) frozen broc, cauliflower, and carrot thawed

Cook onions w oil- med heat (6 mins)
Remove from heat – stir in curry
Transfer to slow cooker

Add chicken and potatoes

Stir broth- salt and cayenne together , then add to slow cooker

Cover – cook until chicken and potatoes are fork tender. 4-6 hrs high or 8-10 hrs low

Meanwhile cook rice – about 20 mins before cook Time is up , add veggies to crock. (Until veggies are crisp tender)

Serve over rice
