I was inspired to make a recipe that reminded me of the enchiladas at my friends authentic Mexican restaurant. This is how it turned out!! It is by far my fave right now and perfect for the cold weather!
7 Cups or 2 Cartons Reduced sodium Chicken Broth
4 Chicken Breasts (15.5 OZ)
Half Can Crushed Tomatoes
1 Can Pinto Beans
1 Jar LaCostena Green Mexican Sauce
1 Cup of Corn
Half brick of Light Cream Cheese
