Roasted Cauliflower & Pepper Soup
Makes 6 – 8 Pints
1 Head Cauliflower, Bite Size Pieces
1 – 2 Sweet Bell Peppers
1 Large Sweet Onion
1 Bunch Kale, Chopped
1 Pound Hot Italian Sausage, Crumbled
1 Hot Chili, Minced or Pinch Red Pepper Flakes
1 – 2 Quarts Chicken Stock/Broth
2 Teaspoons Fennel Seed and/or 2 T Fresh Rosemary
2 Teaspoons Fresh Minced Garlic
Salt and Pepper to Taste
Water as Needed ( I only had one quart of stock thawed
so I used water too)
