Great for breakfast or brunch. The combination of eggs, onion, chili and tomatoes works wonderfully well.

1 pcs gluten free corn tortilla
1 pcs tomato
1 glove garlic
1 pcs shallot onion
1 fresh red jalapeño chile
5 eggs
2 tbsp milk
Black pepper


Cut the tortillas into long strips.

Add to fry pan olive oil and fry the tortilla strips for a minute until they are crisp and golden.

Heat oil in a large frying pan. Add shallot onion, red jalapeño and tomatoe. Cook until soft.

Add chopped garlic.

Pour the eggs into the pan and stir until they start to set.

Add salt and black pepper.

Stir in the milk and slowed down the cooking process till you have a creamy mixture.

Stir the chopped cilantro into scrambled eggs.

Arrange the tortilla strips on plate and add eggs.

Serve immediately.
