1 1/8 Cups Butter, Softened (250g)
1 Cup Sugar (190g)
4 Eggs, Separated Into 4 Beaten Egg Yolks and 4 Egg Whites
1 Teaspoon Vanilla (5ml)
2 1/2 Cups All Purpose Flour (350g)
1/4 Teaspoon Salt (1.5g)
1. In a mixing bowl, cream the butter and sugar until light and fluffy. Add the egg yolks and vanilla. Beat just until combined. In a separate bowl, sift the flour and salt. Add to the creamed mixture gradually beating until combined after each addition.
2. In a separate bowl, beat the egg whites on high speed until peaks form. Gently fold in the egg whites to the rest of the batter.
3. Prepare an 8.5 x 4.5 inch loaf pan with butter and flour. Spoon the batter into the pan, smoothing the top with a spatula. Bake in a preheated oven at 350°F for 50 to 60 minutes, or until golden and an inserted toothpick comes out clean. Let stand in pan for 10 minutes, then remove to a wire rack to cool.
