Enjoy the flavours of coconut with this easy and delicious Coconut Cake recipe.
30ML VEGETABLE OIL
30ML COCONUT MILK
1 CUP SUGAR
1.5 CUP MAIDA
1 CUP GRATED COCONUT
1/2 TSP BAKING SODA
1/2 TSP BAKING POWDER
1/2 TSP VANILLA EXTRACT
1 CUP UNSALTED BUTTER
2 CUPS ICING SUGAR
1.5 CUP GRATED COCONUT
Place vegetable oil, milk, coconut milk and sugar in a bowl.
Whisk well to combine.
Then add flour, grated coconut and mix again.
Add baking soda, baking powder and vanilla essence and mix well.
Pour into a cake mould and bake for 30 minutes at 180 degrees. Repeat the process to make a second cake layer.
To make the icing, mix melted unsalted butter and icing sugar in a bowl. Transfer the icing into a piping bake.
In a clean pan, toast the coconut segments and grated coconuts.
Place one cake and pipe out the icing on top. Place the second cake on top carefully.
Pipe out icing on the sides of the cake, and top the cake with toasted coconuts.
