ROSEMARY ROAST POTATOES:
(Serves 6)
1.5 kg potatoes
10 crushed garlic cloves (skins on) 1.5 tbsp. dried oregano
5 sprigs fresh rosemary
4 sprigs fresh thyme
1 tbsp. gf plain flour
1 tbsp. garlic powder
extra virgin olive oil
black pepper
sea salt

STUFFED MUSHROOMS:
(Serves 6)
12 portobello mushrooms
2 cups cooked quinoa
8 sun-dried tomatoes in olive oil
50g pine nuts
1 leek
2 shallots
2 garlic cloves
30g fresh parsley
1 tsp. lemon juice
sea salt
black pepper
extra virgin olive oil

Sage cheese:
1 cup cashew nuts (soaked)
1/2 cup water
1.5 tbsp. lemon juice
1 garlic clove
1 tbsp. onion powder
6 fresh sage leaves
black pepper
sea salt

Walnut and rosemary crumble:
100g fine breadcrumbs
30g walnuts
1 tsp. chopped fresh rosemary
2 tbsp. extra virgin olive oil
sea salt

Sage crisps:
12 sage leaves extra virgin olive oil

HONEY ROASTED CARROTS:
(Serves 4)
650g carrots
4 tbsp. extra virgin olive oil 1 tbsp. honey
1/4 tsp. cinnamon powder sea salt

PAN-FRIED BRUSSEL SPROUTS:

500g brussel sprouts
1.5 tbsp. coconut or olive oil 1 tbsp. tamari

150g chestnut mushrooms 5 sprigs fresh thyme

1/4 cup red wine
1 tbsp. maple syrup 900ml vegetable stock 2 bay leaves
