Vegan + Gluten Free Recipe by Vegan Acres
An easy one pot meal with a few simple ingredients.
1/4 Cup of Cornmeal
1 Cup of Water
1/4 Cup of Mushrooms, chopped finely
1/4 Cup of Sweet Bell Peppers, chopped finely
Optional: Himalayan Pink Salt & Black Pepper to taste
1/4 Cup of Tomato Sauce
1/4 Cup of Dairy Free Cheese
1 Mushroom, sliced
Add the cornmeal & water into a non-stick frying pan. Simmer on low heat until cooked for approximately 10 minutes. Add oregano, finely chopped mushrooms & sweet bell peppers to cornmeal. Cook on low heat until all water evaporates for about 10 minutes. Using a spatula, shape the cornmeal into an evenly shaped circle. Add a few spoonfuls of your favourite tomato sauce on the cooked cornmeal crust. Add dairy free cheese and mushrooms. Turn off the stove & cover the pan with a lid for 2 minutes so the steam can cook the mushrooms & melt the cheese.
