A super simple vanilla sponge cake great for snacking or for making layered cakes. You can also experiment with many flavorings like citrus zest and extracts my favorite is lemon zest.

Super soft Vanilla Sponge cake

Makes one 8 inch round cake pan or 2 loaf pans

Ingredients:
Cake Flour 130 grams / 1 cup
6 eggs separated
Whole Milk – 70 grams / ¼ cup
Oil – 60 grams / ¼ cup
Vanilla extract/paste – 1 teaspoon
Sugar – 130 grams / ½ cup
Pinch of salt

Steps:
1. Mix egg yolks, milk, oil and vanilla
2. Sift in cake flour and mix until no white streaks remain. Set aside
3. whip egg whites on medium speed until frothy
4. add in vinegar (Cream of tartar works here too) and whip for 5 seconds
5. Slowly add sugar. And continue to whip until stiff peaks form
6. Add in 1/3 of meringue, mix in
7. gently fold in next third of meringue. repeat
8. once no white streaks and lumps remain, pour into cake pan or loaf pans
9. bake at 325 degrees Fahrenheit, 40-50 min for cake pans and 30-35 minutes for loaf pans
10. cool for 30 minutes in pan
11. use a toothpick or a metal skewer to remove cake from the pans.

Notes: I don’t recommend using parchment on the sides of the pan or else it will not rise properly. Also, add lemon zest for a great citrus flavor

I used melted butter in this video but I use vegetable or canola oil regularly to make this cake
